Cherries pack potassium, iron, calcium, and vitamins A, C, and B. This summer fruit supports vision, skin health, digestion, and the cardiovascular, immune, and nervous systems. One culinary advantage of cherries is how versatile they are: they pair well with other berries, fruits, vegetables, pastry and baked goods, cheese, grains, and even chicken — a meat that harmonizes beautifully with these flavors. Chicken works with both pickled and fresh cherries, as shown in this recipe.

Ingredients: chicken thighs – 5–6 pieces; potatoes – 5 pieces; onions – 2 pieces; cream (10–15%) – 500 ml; hard cheese – 150 g; cherries – 200–300 g; salt and pepper – to taste; oil – for frying.

Quickly sauté the salted chicken thighs over high heat until they develop a golden crust.

Grease a baking dish. As the first layer, place sliced onions at the bottom, followed by sliced potatoes. Season with salt and pepper.

On top of the potato layer, add the slightly browned chicken from the skillet, then scatter the washed cherries with the pits removed.

Pour the cream over everything and place the dish in an oven preheated to 180°C (350°F). After 25 minutes, remove the dish, sprinkle with grated cheese, and continue baking for another 15 minutes.
