Sweet-and-Savory Chicken Livers with Raisins and Bell Peppers

Chicken liver
Ingredients:

2.2 lb chicken livers
14 oz sour cream
3.5 oz raisins
1–2 onions
2 bell peppers
1 tbsp soy sauce
2–3 tbsp oil
Salt and pepper

Rinse the chicken livers and remove any membranes. Place them in a pot, cover with water, and bring it to a boil. Skim off any foam that forms on the surface. Season the water with salt to taste. Once the water reaches a boil, cook the livers for 5 minutes. Remove the livers, let them cool slightly, and rinse them again.

In a sauté pan or deep skillet, sauté the sliced onions until they soften. Add the sour cream, sliced bell peppers, and the rinsed raisins. Pour in the soy sauce and season with pepper and additional salt to taste. Add the livers and simmer everything together for about 15 minutes.

Enjoy this dish hot as an appetizer on its own, or serve it with a side — it’s especially delicious with buckwheat.
