
A team at Yonsei University’s Department of Chemical and Biomolecular Engineering announced a breakthrough in lab-grown meat. The researchers have successfully cultivated artificial beef in the lab, and unlike earlier cultured samples, this version closely resembles the taste of a real steak.
The team says their technology could help fight global warming, reduce carbon emissions, and spare countless animals from extinction.
This advance also boosts flavor, bringing artificial meat closer to tasting like the real thing.
What Makes This Breakthrough Special?
The researchers developed a “taste-switching structure” that releases meaty flavor compounds at specific cooking temperatures.
Professor Jinki Hong, a co-author of the study, told BBC Science Focus, “Many scientists have tried to develop various bio-scaffolds to help livestock cells produce 3D-structured cultured meat.” However, previous efforts focused mostly on biological requirements and neglected aspects that matter to consumers, such as aroma, texture, and taste. The Korean team says it has addressed that gap.
The new product uses a gelatin-based gel that contains an aromatic compound that breaks down when heated. When it breaks down, it releases flavors similar to those produced when cooking traditional meat.
Chemical analysis shows the cultured meat’s flavor profile closely resembles grilled beef.
“Of course, it’s not identical to conventional meat, but we believe we can close the gap in the future,” said lead author Mile Lee.
Cultured meat is increasingly seen as a sustainable alternative to animal protein. Professor Hong says that if scientists can effectively replicate meat, they can provide consumers with food they enjoy while significantly cutting carbon emissions.
Meat grown to meet specific human needs could also become a healthier dietary option in the future.
“Because this meat is grown in a lab, its properties can be adjusted to meet requirements. For example, if consumers want meat that is high in protein but low in fat, we can give it those characteristics,” Lee said.

Challenges Ahead
Despite the progress, the researchers acknowledge shortcomings that require more work. As Professor Hong says, there is still a “long way to go to produce cultured meat that fully replicates conventional meat.”
The costs of developing these technologies remain astronomical, so lab-grown meat is not yet economically viable or commercially feasible. Don’t expect to see it on supermarket shelves tomorrow.
The researchers remain optimistic. “We believe we can make a significant contribution to the development of cultured meat, and this will ultimately benefit the global community,” the team said.
The findings of the study were published in the journal Nature Communications.
