Cherry-Bran Muffins: Easy, Moist, and Delicious

Bran and cherry muffins
Ingredients:

300g pitted cherries
300ml milk
100g wheat bran
3 eggs
150g sugar
250g vegetable oil
300g flour
1 tsp baking powder
1 tsp baking soda (activated)
vanilla extract
a pinch of salt

Soak the bran in the milk for a few minutes to let it swell.
Whisk the eggs with the sugar and vanilla extract.
Add the sifted flour combined with the baking powder and salt, the soaked bran, and the baking soda (activated with vinegar or lemon juice) to the eggs.
Mix everything together.
Pour in the oil.
Stir the mixture until combined.
Fold in the cherries.
Fill the molds halfway.
Bake at 180°C (350°F) for 25 minutes.
Dust the finished muffins with powdered sugar, if desired.
