
Potatoes in the filling of these vegan stuffed cabbage rolls support bone and cartilage health. The cabbage that wraps the potato-and-mushroom filling may help reduce the risk of breast cancer and slow macular degeneration, protecting against age-related vision loss.
Ingredients: 12 cabbage leaves; 400 g potatoes; 300 g mushrooms; 1 onion; 1 carrot; 200 g tomato paste; 1 bay leaf; vegetable oil for frying; a small bunch of dill; salt to taste.
Peel and boil the potatoes in salted water. Mash the cooked potatoes, reserving a little of the cooking water in a cup and adding some back to the mash if needed.
In a pan, sauté the finely chopped onion and grated carrot in oil, then add the mushrooms and cook until tender. Mix the mushroom mixture with the mashed potatoes and season with salt and chopped dill.
Blanch the cabbage leaves, removing them from the water (but do not discard the water), trim the thick veins, and fill the leaves with the potato mixture to form rolls.
Heat oil in a skillet and fry the stuffed cabbage rolls until golden brown on both sides. Once browned, transfer the rolls to a pot. Pour a little of the reserved cabbage cooking water into a bowl, dissolve the tomato paste with salt in it, and pour the sauce over the rolls so the liquid covers them.
Sprinkle the rolls with chopped dill, add the bay leaf, bring to a boil, then cover and simmer over low heat for 20 minutes.

Boil the cabbage head whole in a pot, removing the leaves one by one as they soften. Or get soft cabbage leaves without boiling: microwave or steam the head. Remove any damaged outer leaves from the washed cabbage, wrap the head in two layers of plastic wrap, and microwave on medium power for 10 minutes. After it cools, unwrap the cabbage, remove the core, and separate the leaves. In a steamer, steam a medium cabbage head until soft — about 15 minutes for the whole head, with the top leaves softening in about two minutes. Continue steaming and remove ready leaves every two minutes. Freeze pre-softened cabbage leaves for later use.
