Oatmeal Apple Cookies with Korovka Caramel

Apple oatmeal pastries

Ingredients:

  • 1 cup of rolled oats
  • 1 cup of flour
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • 3.5 oz (100g) unsalted butter
  • 5 tbsp sugar
  • 1 egg
  • 1 cup grated apples
  • 2.8-3.5 oz (80-100g) “Korovka” candies (a popular Russian caramel candy)

Combine the flour, baking powder, rolled oats, and cinnamon.

In a separate bowl, cream the softened butter and sugar. Add the egg and beat the mixture with a mixer until smooth.

Add the dry ingredients to the butter mixture and mix. Fold in the grated apples—squeeze out excess juice—and the pieces of candy. Stir to combine.

Drop teaspoonfuls of dough onto parchment paper, leaving space between each cookie.

Bake the cookies for 12-15 minutes at 350°F (180°C).
