Crispy Corn Fritters with Lime-Parmesan Mayo

Corn kernels pack a surprising nutritional punch: vitamins A, B, C, D, E, K, and PP. They also provide plenty of dietary fiber, magnesium, potassium, and phosphorus. Including corn in the diet may help reduce the risk of stroke and is a smart choice for middle-aged and older adults.

Ingredients: 1 cup of flour, 1 cup of polenta (fine cornmeal), 400 g of canned corn, 1 1/2 cups of kefir, 1 egg, 3 shallots, 2 tablespoons of grated Parmesan cheese, 1 tablespoon of finely chopped parsley, 1/2 cup of homemade mayonnaise, 1 lime (juice and zest), 1 teaspoon of baking powder, 1/4 teaspoon of ground dried chili pepper, oil for frying.

Mix sifted flour, baking powder, cornmeal, Parmesan, parsley, and chili in a bowl. Make a well in the center of the dry mixture and pour in the kefir and beaten egg. Stir until smooth, then fold in the chopped shallots, which are milder than regular onions, and the corn.

Heat a skillet with oil for frying. Drop 1/4 cup of batter per fritter into the skillet. Fry over medium heat, 2 minutes per side.

Mix the mayonnaise with the lime zest and juice to make a sauce for the corn fritters.

Nutrition experts say fresh, frozen, and canned corn kernels have comparable nutritional value. Rinse canned corn well before using to reduce sodium.
