Beets can improve blood chemistry and circulatory health because they contain nitrates the body converts into nitric oxide. Nitric oxide helps widen blood vessels and supports red blood cell production, so beet-based foods and drinks are a quick way to restore energy. Rich in zinc and phosphorus, table beets can help protect children from developing rickets, and the antioxidants in this root vegetable can help reduce cancer risk. B vitamins support the nervous system, and iron and cobalt help combat anemia.
Beet Kvass
Ingredients: 1 beet, 1.5–2 liters of brine (for 1 liter of water, use 2 tablespoons of salt and sugar), 1 slice of rye bread.
Wash the beet, peel it, cut it into large pieces, and place the pieces in a three-liter jar—fill it halfway to three-quarters full, depending on the strength you want for the kvass. Pour warm brine over the beets and place the slice of rye bread on top (remove the bread after two to three days).
Cover the jar with a towel and leave it in a warm place to ferment. After 7–10 days, strain the kvass and serve it as a restorative drink or use it to prepare dishes like cold beet soup.
Life Hack
Drink a glass of beet kvass daily after meals to raise hemoglobin levels and aid detoxification. To help address hypertension and headaches, drink half a glass three times a day on an empty stomach.
