150 g honey
300 g flour
2 eggs
100 g sugar
150 g nuts
1/2 tsp baking soda
1 tsp ground cinnamon
Make a well in the flour, pour in the honey warmed with cinnamon, and mix lightly to combine. Add the sugar, eggs, and baking soda, then knead the dough vigorously for 30 minutes (the longer you knead the dough, the better the honey cakes will rise during baking). Roll the dough out thin, cut circles with cookie cutters, brush each with egg, and place a quarter of a nut on top. Bake in a preheated oven (190-200°C or 375-400°F) for 10 minutes. I skipped the nuts and the egg wash; the honey cakes turned out delicious—almost festive for New Year and Christmas!
