An optical illusion: why crab sticks contain no crab
Those early surimi balls differed from ordinary fish cutlets by their unusual whiteness, firm even texture, and lack of a fishy oil smell. The absence of that odor proved especially valuable in Japan because fish was one of the primary protein sources.
