To salt red fish, you need only salt and sugar. Rub the fillet with the mixture and wait for it to cure. Before you start, choose the type of fish. If you prefer fattier varieties, choose salmon or trout; pink salmon and chum salmon are leaner and better suited for sandwiches. It’s important that the fish fillet has skin, as it plays a significant role in the salting process. However, you don’t have to limit yourself to just red fish; any fish fillet can be salted using the same method as salmon, trout, or other salmon species.
Ingredients: red fish (fillet or steak) – 1 kg; salt – 2 tablespoons; sugar – 1 tablespoon.
Preparation
Mix the salt and sugar in a small bowl, then rub the mixture evenly onto the cleaned, deboned, rinsed, and dried fish. Place the fish in a container, cover it, and refrigerate for 12 hours. Drain the liquid from the container and refrigerate the fish for another 12 hours. Try salting red fish at home at least once—you’ll likely want to do it again.
