30-Minute Citrus-Glazed Red Fish for Holiday Guests

Quick Celebration: Recipe for Red Fish with Citrus Fruits

Perfect for a New Year’s feast or for impressing unexpected guests, this red fish with citrus sauce takes just 30 minutes total, with only 15 minutes of active prep.

Ingredients (for 4 servings): 450 g of red fish fillet; 1 orange; 1 grapefruit; 1 shallot; 1 tablespoon of honey; 1 tablespoon of lemon juice; 1 tablespoon of olive oil; black pepper and salt to taste; a few sprigs of basil or parsley.

Cut the fish into portion-sized pieces and season them with salt and pepper. Bake for 20 minutes in an oven preheated to 180°C (350°F).

Slice the citrus fruits in half, squeeze the juice from one half of each fruit, and separate the untouched halves into segments. Peel each segment and cut them into smaller pieces.

Chop the shallot into small pieces and finely chop the herbs.

Place a skillet over medium heat and warm the olive oil. Sauté the shallot until soft.

Add the citrus juice, the lemon juice, and the honey. Bring to a boil and simmer until the sauce reduces by half. Season the sauce with salt and pepper, then add the herbs. Remove the skillet from the heat and mix in the citrus pieces. Drizzle the finished fish with the sauce before serving.

Bake a whole fillet of trout or salmon by placing it skin-side down on foil and loosely wrapping the foil into an envelope around the fish. The thinner the fillet, the less time it will need to bake.
