Ingredients:
- 4 large eggs
- 130 g (about 2/3 cup) sugar
- 600 g (about 1.3 lbs) apples
- 1 pinch of cinnamon
- 130 g (about 1 cup) flour
Instructions:
Start by preparing the filling. Peel the apples and grate them on a fine grater. Drain the excess juice. Add a little sugar and a pinch of cinnamon, and mix well. Set the filling aside.
Make the batter. Beat the eggs, then gradually add the sugar and continue beating the mixture for a few more minutes. Next, add the flour and gently fold the flour into the egg-and-sugar mixture.
Line a baking sheet with parchment paper. Spread the grated apples evenly over the paper in a thin layer, leaving a little space at the edges. Pour the batter over the apples and bake for 15 minutes at 180°C (350°F). When the cake starts to turn golden, it’s done.
Transfer the cake onto a clean kitchen towel and carefully peel off the parchment paper. Use the towel to roll the cake into a log.
Dust the top with powdered sugar.
