Young Potatoes with Cheese: a simple, flavorful recipe

One of the best things about potatoes is their balance of phosphorus and calcium. These minerals occur in the tuber in a ratio that helps support bone strength. A diet low in calcium and high in phosphorus can reduce bone density and lead to osteoporosis. Including potatoes in meals can help provide magnesium, zinc, iron, vitamin C, and folic acid. Boiled potatoes are high in starch and very low in fat.

Ingredients: 500 g potatoes, 100 g cheese, 20 g butter, 3 sprigs each of dill and parsley, salt and black pepper to taste.

Soaking young potatoes in cold water for 10 minutes makes peeling easier. A good way to remove the thin skin quickly is to scrub medium-size potatoes under running water with a brush or with the abrasive side of a kitchen sponge.

Place the peeled potatoes in a pot, cover them with water, add salt, and boil over medium heat for about 15 minutes. After boiling, drain the water from the potatoes into a jar and save it to use in cooking in place of broth.

Cut the boiled potatoes into quarters and sprinkle them with crumbled cheese. Top the potatoes with a pat of butter and garnish them with herbs.

* Leaving potatoes in cold water for 30 minutes or more will make them watery. Also, peeled potatoes exposed to air will darken, so peel them just before boiling.

* The water used to boil the potatoes can be used for making soups. This vegetable broth is richer than plain water because it contains nutrients extracted from the potatoes. Potato water can also be used in baking as an ingredient in dough.
