Creamy Avocado Salad with Sun-Dried Tomatoes and Feta

Salad with avocado, sun-dried tomatoes, and feta cheese

Ingredients:

  • 1 ripe avocado
  • 10 sun-dried tomatoes
  • 1 bell pepper
  • 3 tablespoons canned corn
  • 20 olives
  • 100 g feta cheese
  • Dill, chopped
  • Fresh lemon juice
  • Salt to taste

Choose a ripe, soft avocado, or buy a firm one and let it ripen.

Slice the avocado in half lengthwise and cut it into thin slices. Drizzle immediately with lemon juice to prevent browning. Arrange the slices on a plate, drizzle with more lemon juice, and sprinkle with salt.

Finely chop the dill and sprinkle it over the avocado.

Chop the sun-dried tomatoes and layer them on top of the avocado, adding a drizzle of the oil from the tomatoes if desired.

Cut the bell pepper into thin strips and add it to the avocado and tomatoes.

Dice the feta cheese into small cubes and sprinkle them on top.

Add the corn and sliced olives.

Toss the salad gently or leave it arranged.

This salad is a family favorite. In winter we often crave avocado, and I dry the tomatoes specifically for this dish. It’s delicious, hearty, and healthy.
