Easy Seafood Salad with Mozzarella, Cherry Tomatoes, and Bell Pepper

Seafood salad with mozzarella and bell pepper
Ingredients:

1) Seafood cocktail (squid, mussels, shrimp) – 180 grams
2) Mozzarella cheese – 125 grams (1 package)
3) Cherry tomatoes – 350 grams
4) Bell pepper – 1/3 of a large pepper
5) Onion – half a small onion
6) Olive oil
7) Salt
8) Italian seasoning
9) Lemon juice
10) Fresh parsley

This recipe makes about 4 servings

Cut the cherry tomatoes in half.
Clean the bell pepper and slice it into thin strips. Be careful not to add too much pepper, as its strong flavor can overpower the other ingredients. One-third of a large pepper is sufficient.
Slice the onion very thinly into half-moons. Drizzle with lemon juice and let it sit for a few minutes.
Cut the mozzarella into large cubes.
Add the seafood cocktail — I used a pre-cooked mix. If using frozen seafood, thaw it and sauté it in a pan with a little olive oil for 3 minutes.
Gently mix everything together, adding salt, Italian seasoning, a splash of lemon juice, and a drizzle of olive oil.
Transfer to serving bowls.
Chop the parsley coarsely and add it to the salad, mixing gently.
