An overly acidic internal environment can lead to toxic buildup, infections, mineral loss, protein breakdown, and cell damage. Keeping your body’s acid-base balance steady is an important sign of good health. What should you know about food pH?
The Hostess’s Responsibility
There’s a saying that a cook is responsible for a sick stomach. The host bears responsibility for the people they feed. But does every cook know, for instance, which ingredients in a dish are alkaline and which are acidic? That knowledge can help avoid menu choices that harm health. Ideally, alkaline foods should make up at least twice the amount of acidic foods — roughly 80% alkaline and 20% acidic in the daily diet.
Some food components leave an alkaline residue during digestion, while others leave an acidic residue. The former are called alkaline-forming, and the latter acid-forming. Among minerals, potassium, calcium, sodium, copper, magnesium, iron, and manganese tend to be alkalizing, while sulfur, iodine, phosphorus, chlorine, carbon dioxide, carbonic acid, lactic acid, and uric acid contribute to acidity.
Symptoms of eating too many acid-forming foods can look unrelated to diet. When the body struggles to neutralize acids, it can signal problems through digestive issues, weight gain, or loss of appetite. Other signs include bronchitis, runny nose, headaches, nervous tension, fatigue, insomnia, and worsening hair, skin, and nails. Long-term acidity can lead to frequent illness and premature weakness. A healthy, more alkaline internal environment supports normal bodily functions and contributes to vitality and longevity.

The Flavor Paradox
Because of food safety and health, it helps to know which foods taste acidic and how that matters. Nutritionists point out the preservative and flavoring agent E296, which is malic acid. pH measures the acidity of aqueous solutions; the letters stand for “potential of hydrogen,” and acidic solutions have a pH below 7.
Rhubarb is considered one of the most sour-tasting vegetables because it contains high levels of malic and oxalic acids (which is why people usually don’t eat it raw), while lime is among the most acidic fruits.
Fruits such as lemons, grapefruits, oranges, mandarins, pomegranates, kiwis, gooseberries, cranberries, and cherries all range in sourness. That sour flavor comes from organic acids like malic, citric, and tartaric acid. As fruits ripen, plants use those acids during respiration, so their concentration decreases.
A food that tastes sour isn’t necessarily acid-forming in the body; lemons taste sour but are considered alkalizing. In metabolic terms, citrus fruits often have an alkalizing effect.
Acidic products tend to be high in animal protein and low in water. This group includes many types of flour and most grains, sugar, bread, mushrooms, fried nuts, legumes, and more.
Keep in mind that meat, eggs, fish, beans, and grains are generally acid-forming, while vegetables and fruits are usually alkalizing. Whole grains, flour, and rice have moderate acid-forming properties in their natural state, but refining and processing increase their acidity.

Food Classification
All our food can be divided into three categories. The “tasty” group — which tends to be the most problematic because it acidifies the body — is mainly processed food: refined, overcooked, and stripped of fiber.
Acidic foods:
- oils and fats;
- dairy products (sterilized and pasteurized milk, butter, and cheese);
- other animal products (meat, fish, poultry, eggs);
- fried and spicy foods;
- ready-to-eat meals and convenience foods (baked goods, white flour, white sugar, polished rice);
- sweets made with white sugar (cookies and candies);
- grains and legumes (including wheat, corn, beans);
- dried peas;
- dried seeds and nuts (sunflower, sesame, cashew, peanuts, walnuts, melon seeds);
- alcohol, coffee, tea, carbonated drinks.
Alkaline foods:
- sprouts of peas, legumes, and grains;
- fresh vegetables and green root vegetables;
- fresh or dried fruits, including citrus.
Partially alkaline foods:
- fresh nuts (almonds, coconut, Brazil nuts);
- fresh green beans, peas, grains, and millet;
- raw milk and fresh cheese.
The same food can be acid-forming or alkalizing depending on its state. For example, raw milk is alkalizing, while boiled milk is acid-forming. To ease digestion of legumes, soak and sprout them; that reduces their acidity.
How to Lower Acidity?
Acidosis can result from poor nutrition, eating too many acid-forming foods, and not drinking enough water. Highly acidic foods can promote inflammation. The goal is to neutralize and eliminate excess acid from the body. Fruits and vegetables that help include watermelon, cucumber, mango, banana, and coconut.
Higher acidity increases gastric juice secretion. Choose foods that naturally lower that activity and that the stomach can digest easily without lingering.
To soothe the stomach:
- low-fat broth and semi-liquid soups;
- semi-liquid porridge made from whole grains (made with water or a water-milk mix);
- vegetable purée or pureed meat dishes;
- steamed omelet;
- lightly toasted wheat bread.

Contraindications:
- fatty and mushroom broths;
- carbonated drinks;
- fermented, pickled, and canned foods;
- smoked, fried, or spicy foods.
How to Increase Acidity?
If gastric acidity is too low, that’s a problem as well. Low acidity can cause nausea, and it can lead to increased gas and bloating. A corrective diet aims to normalize gastric juice secretion. You can eat both fresh and cooked foods: boiled, stewed, baked, or lightly fried.
Options include:
- fiber-rich foods (fresh or baked vegetables and fruits);
- meat, fish, mushroom, or vegetable soups with grains and vegetables;
- ham;
- seafood (fish roe);
- dairy products;
- mild cheeses.
Contraindications:
- vegetables and fruits with coarse fiber (radish, horseradish, grapes);
- legumes;
- fried mushrooms;
- fatty dishes;
- fats and oils (both plant and animal);
- spicy sauces and seasonings;
- salted and smoked fish;
- boiled eggs;
- baked goods;
- milk;
- carbonated drinks.

Maintain Balance
pH affects how taste receptors perceive food. The lower the pH, the more acidic a food tastes; higher pH values make flavors seem more bitter.
With a list of foods that tend to acidify the body (remember: sour taste isn’t tied to acid-forming properties), avoid overindulgence. First, limit sugar: cut back on chocolate, reduce or eliminate sweets, baked goods, and carbonated drinks. Avoid excess animal protein — particularly red meat, which is best eaten no more than once or twice a week.
Alkaline foods are a key part of a healthy diet because they help keep your body’s pH in a good range. Vegetables (pumpkin, potatoes, zucchini, carrots, cabbage, broccoli, cucumbers, tomatoes, green peas), greens (spinach, celery, lettuce, basil, dill, parsley), and fruits (lemons, limes, grapefruits, oranges, pears, kiwis, grapes) can help balance acidity.
You can check your body’s pH by measuring saliva or urine with a pH meter, test strips, or indicator paper. Measure an hour before eating or two hours after a meal. The optimal pH balance is around 6.4–6.5.
