Garlic Scape Sauce That Makes Fried Fish Sing

This sauce uses not just garlic cloves but also the green shoots—garlic scapes—with little bulbs at the tips. Everything is run through a meat grinder, seasoned to taste, and canned. It’s ready to serve and will whet everyone’s appetite.

This garlic sauce pairs especially well with fried fish, like crucian carp. Place a serving of fried fish in a dish, pour the garlic sauce over it, cover tightly with a lid, and keep it over low heat for a minute or two. Add a second serving and pour more sauce over it; repeat for a third serving. Once the last portion is in, keep the dish covered for 15 to 20 minutes. Then serve—the garlic sauce brings out the flavor of the fish beautifully.
