The Silkiest Farmer’s Cheese Casserole

Tender cottage cheese casserole
Ingredients:

1000 g of farmer’s cheese (about 2.2 lb)
5 tbsp cornstarch (level tablespoons)
4–6 tbsp sugar (to taste; brown sugar is sweeter than white; I used 65 g)
5 tbsp sour cream (80 g)
5 medium eggs

Pass the farmer’s cheese through a sieve or blend it until smooth, then add the granulated sugar.
Beat the mixture at maximum speed with a mixer.
Add the sour cream and cornstarch, and beat again at maximum speed.
Gradually add the eggs to the mixture, stirring gently after each addition.
Pour the mixture into a greased slow-cooker bowl or a greased baking dish.
If using a slow cooker, cook on the “Bake” setting for 1 hour, then switch to “Warm” for 20–30 minutes.
Do not open the lid immediately; let the casserole sit for 30 minutes, then carefully remove the bowl.
If using an oven, bake for 50–55 minutes.
