French Syrniki: Layered Cottage Cheese and Peach Bake

French-style syrniki

Dough:

5 egg yolks
½ cup sugar
200g margarine
3 cups flour
1 packet of baking powder

Cheese Filling:
2 kg cottage cheese
6 egg whites
6 egg yolks
400g sugar
200g butter
1 can peaches in syrup
3 packets sour cream pudding mix

Egg Whites:
5 egg whites
1 cup sugar
1 packet of lemon jelly (Polish)

Dough Preparation:
Grate the egg yolks with the sugar, then add the margarine and grate again. Mix in the flour combined with the baking powder until a dough forms. Divide the dough into two portions, one larger and one smaller.

Cheese Filling Preparation:
Pass the cottage cheese through a meat grinder twice, then mix in the egg yolks, sugar, and butter. Beat the six egg whites until stiff and fold them into the mixture, then add the pudding mix.

Egg Whites Preparation:
Beat the five egg whites with the sugar until stiff, then stir in the lemon jelly.

Spread the larger portion of the dough in a baking dish, layer half of the cheese filling on top, followed by the sliced peaches, then the remaining cheese filling, and finally the egg whites with jelly. Grate the smaller portion of the dough over the top.

Bake for 1 hour and 15 minutes at 350°F (180°C).
