Ham-and-Cheese Veal Rolls

Veal rolls with ham and cheese
Ingredients:

2.2 lb veal
1.1 lb ham
10.6 oz hard cheese
2 tablespoons flour
1.8 oz fat
2 tablespoons oil
1 teaspoon mustard
sugar, pepper, salt

Cut the meat into pieces. Pound the pieces flat and season them with salt and pepper. For each portion, place a slice of ham and a slice of hard cheese on the meat, then roll it up, tie the roll with string, and sprinkle the rolls with flour. Fry the rolls in the fat, then place them in a dish. Add 2 tablespoons of water to the dish and simmer the rolls on low heat until cooked through. Before serving, remove the strings from the rolls, arrange them on a plate, surround the rolls with halved red tomatoes, and drizzle the rolls with the oil mixed with mustard, a pinch of sugar, pepper, and salt. Serve with slices of dark bread on the side.
