
Peas are incredibly nutritious, packed with protein, carbohydrates, and soluble fiber that aids digestion. This legume also provides B vitamins and vitamins C, D, E, and K. The potassium in peas helps normalize blood pressure and reduce the risk of cardiovascular disease. Peas also contain iron, copper, magnesium, calcium, cobalt, iodine, phosphorus, and sodium. Pea soup can help regulate blood sugar levels and may help prevent diabetes.
Ingredients (for a 5-liter pot): 500 g peas; 6 pork ribs; 5 potatoes; 1 carrot; 1 onion; 5 garlic cloves; 1 teaspoon smoked paprika; 2 bay leaves; salt to taste; croutons and herbs for garnish.
Soak the peas in cold water overnight to soften them. Prepare the soup the next day.
Rinse the smoked ribs and cut them between the bones. Add them to boiling water and cook about 30 minutes, skimming off any foam.
Remove the ribs from the broth, pull the meat off the bones, and return the meat to the broth. Add the soaked peas and cook another 30 minutes, until the peas are tender.
Peel and wash the carrot and onion. Dice the onion into small cubes and cut the carrot into strips. Sauté them briefly in a small amount of oil.
Add the diced potatoes to the broth with the ribs and peas and cook 10 minutes. Stir in the sautéed vegetables. Season with salt, add the bay leaves, and sprinkle in the smoked paprika.
Before serving, top the pea soup with croutons and chopped herbs (parsley or dill).

Soak hard, dry peas for 6–8 hours in water with 1 tablespoon of baking soda to help them cook faster. Cook the soup until the peas are tender — they should mash easily between your fingers.
